1. Quang Noodles (Mi Quang)
Quang Noodles are made of flat and thick rice noodles that are placed in a bowl filled with broth and topped with pork, shrimps, boiled eggs and fresh herbs. There are three types of Quang Noodles served with different types of broth: simmering pork and tibia shin, chickens, or snakehead fishes seasoned with salt, sugar, black pepper, shallot, garlic and lemon grass.
Quang Noodles originated from Quang Nam province. However, Quang noodle is essence of Da Nang owing to that local people take advantage of available material and put their emotion into this dish.
You can try Quang Noodles at Mi Quang 1A, 1A Hai Phong, Hai Chau District.

2. Bun Thit Nuong (Grilled Pork Noodle Salad)
Bun Thit Nuong is a popular Vietnamese cold rice-vermicelli noodle dish topped with grilled pork, fresh herbs like basil and mint, fresh salad, bean sprouts, and spring rolls.
In Danang, Bun Thit Nuong or rice vermicelli noodle with grilled pork is special and different from that in Saigon or other regions because of its sauce made from ground meat, liver, and fermented soy bean.
You can try the dish at some foodstalls on Hoang Dieu or Yen Bai Street.

3. Banh Canh (Vietnamese Thick Noodles)
Banh canh is a thick Vietnamese noodle that look quite like Japanese udon which has the thickness of a chopstick, more or less. The soup base (broth) can be cooked from pork, crab, fish, and the toppings can be with fish cake, mushroom, Vietnamese ham, shimp balls, etc. The noodle for Banh canh can be made from rice flour, tapioca flour, sometimes wheat flour, or a mixture of those.
You can try Banh Canh at some food stalls on Nguyen Chi Thanh Street.
